Some people who see me cooking at the takeaway ask why a 40 something English woman wants to be a Thai chef. To be honest it was mostly a set of unforeseen circumstances over the last 12 years, but it did make me realise how much I love creating the wonderfully varied tastes Thai cuisine offers. I remember one of my first experiences with this mystic style of cookery, in Pong's home village in Northern Thailand.
